Think Spring! Try our highly savory sofrito recipe! What exactly is sofrito, you may ask? Sofrito is a heavily seasoned mix or puree of minced vegetables and spices. The most frequently used vegetables are fresh peppers, tomatoes and onions and they are spiced with fresh garlic and herbs to create a dynamite concoction of flavor! If you are of Latin American or Caribbean culture, your family most likely has a favorite, traditional family recipe. Sofrito is extremely versatile and can be used on top of anything - tacos, rice, fish, chicken and steak. My favorite is tacos! Hard or soft shell, you won’t be disappointed! Some of my friends top their soups, baked potatoes, and even just eat it with tortilla chips.
You will need:
2 green bell peppers, seeded and chopped
2 cubanelle peppers, seeded and chopped
4-5 aji dulce or sweet chili peppers
1 large white onion
8 cloves of garlic, chopped or minced
1 bunch cilantro
2 plum tomatoes
1/4 cup olive oil
pinch of salt and pepper
Cooking Instructions:
Very easy! Add all of the ingredients into a food processor or blender and mix until you reach your preferred consistency, either chunky or smooth. Taste and add desired amount of salt and pepper. Store in the refrigerator or freeze.
