I love making a themed holiday goodie in our house. We're preparing for chickens and a puppy, so the night kind of gets away from us after work, especially with it being brighter out in the evening. So last night, knowing we wouldn't have time for cupcakes or cookies, I whipped up these "chips" to have with dinner. They are super tasty and brought a smile to everyone's face. We hope you enjoy them too!
You will need:
2-3 (or more) spinach soft tortilla wraps
shamrock (or any holiday themed) cookie cutter
a drizzle of olive oil (or any oil you prefer)
everything bagel spiced (or any other spice you like)
Cooking Instructions:
Preheat oven to 250
Make the shamrock chip cut-outs: Take one tortilla at a time and lay it out on a cutting board. Then pressing firmly with the cookie cutter, I tried to get as many cut outs as I could and then I proceeded with 2 more tortillas.
Next, I put the shamrock cut-outs in a bowl and drizzled with olive oil. Using a spatula, I folded the shamrocks into the oil, making sure each cut-out got some oil and I topped them with my everything bagel spices.
Lay the shamrocks on a cookie sheet. I popped mine in the oven for 8-10 minutes at a time but checked on them continuously to prevent them from burning.
I let them cool a bit for our son, but my husband and i enjoyed them while they were still a bit warm.
