How does your garden grow? The bunnies and other animals have discovered some of our veggies and fruits, but they have also spared us a few treats too. Hopefully they won’t eat every red strawberry, but we shall see. As I was getting lunches ready for work and school this morning, I wondered if the rain had helped any of the kale and spinach grow, and boy was I in for a treat. After I gave them a nice bath and photo shoot, I proceeded to make this delicious and quick salad. Top it with your favorite dressing and you’re good to go! Enjoy and happy gardening!
You will need:
Roasted Chick peas (I soaked these, they were dry, overnight and then rinsed them, covered them in olive oil and sea salt and roasted them for about 20 minutes or so on 350 degrees)
Kale and spinach sliced up
I drizzled mine with an Italian dressing at work and shook it up a bit! So filling and so pretty!
