Our recipe for Irish soda bread has been in our family for decades. It has no caraway seeds as none of the kids in our family liked them. As children, we'd pick them out and pile them on our plates. Hence, our great aunts created a delicious recipe for us without seeds. Our recipe is also much moister than traditional Irish soda bread recipes that are often crumbly. When this bread is warm and fresh out of the oven, we love to eat it with melted butter on top. When it's room temperature, we think it tastes best with a slab of cream cheese. Eat with coffee or tea any day of the year, no need to wait until St. Patrick's Day!

You will need:

3 cups flour

3 teaspoons baking powder

1/4 teaspoon baking soda

3/4 cup sugar

1 stick of butter (melted)

1 egg

1 1/4 cups buttermilk

1 cup raisins

Preheat oven to 350 and grease bread pan or line with parchment paper. 

Mix dry ingredients and raisins together in a bowl. In a separate bowl mix melted butter, egg and buttermilk. Add wet ingredients to the dry mix bowl, stir until blended. 

Bake for 55 minutes or until a toothpick comes out clean. Cool for 5 minutes, remove from bread pan and enjoy!
