This easy recipe is super delicious and only has three ingredients! It can be whipped up on short notice, too. My husband, son and I were vegan for quite some time, and for the majority of the time, we often still cook and eat vegan. Although not all of our baked goods reflect vegan, this one does. Recently, we got great some news we had been waiting for and I wanted to treat my family to a pie to celebrate. I went into one of my favorite stores and they didn’t have a single pie on the shelf. I was feeling pretty disappointed and then remembered we had a leftover graham cracker crust from Easter, some silken tofu and semi sweet chips! It all came together with a splash of vanilla and some almond whipped cream to top it off. Needless to say, everyone was over the moon!
*This chocolate pie could be made vegan, or non vegan. Just alter to whatever you have on hand, either way the whole family will love it!
You Will Need:
1 pre-made graham cracker crust
1 package silken tofu
1 package chocolate chips (we used semi-sweet)
1 tsp vanilla
Baking Instructions:
1. Melt your chocolate chips in a microwave bowl for a minute at a time, stir. This step should take less than 2 minutes.
2. In a large bowl, combine the vanilla and tofu. Once the chocolate chips have cooled a bit, add them too. Using a hand mixer, beat until smooth.
3. Place pie batter into graham cracker crust and refrigerate until you're ready to eat. Top with non-dairy whipped cream.
